My name is Kate. I'm 18 years old, and I'm studying to be a chef at one of the tiny but very hothouse culinary colleges in Poland. I grew up outside Warsaw, in a small town near a lake, where the smell of dill and freshly cut grass is in the air more often than rain. My mom is a music teacher, my dad is a mechanic. They always said that the main thing in life is to work, study and not forget to dream. I listened to them and dreamed of big portions: not just cooking, but creating dishes that make people smile and think.
The first time I felt like I wanted to become a chef was at a school festival in the kitchen of the guest rooms. I was responsible for the dessert and it was like a little magic: salt in the dough, citrus in caramel, crunchy capture of nuts on the surface. Then I realized that the kitchen is a language that can be spoken without words. Since then, I've been learning to speak the language fluently: I've been experimenting with techniques, studying the theory of basic basics, reading cookbooks in Polish and English, watching workshops online, and collecting recipes from local markets.
Living in Poland has given me the opportunity to see how diverse the country's cuisine is: from simple rustic dishes to modern interpretations influenced by European and Asian techniques. I love Polish seasonal products mushrooms, blueberries, smoked salmon from the Baltic, local fermented dairy products. But my passion outside of home cooking is haute cuisine, where details matter: the exact balance of salt, texture, tasks on time, cleanliness of service. My dream is to work in a Michelin restaurant: not necessarily in the biggest star in the world, the main thing is that they appreciate the purity of taste, discipline and constant striving for excellence.
Studying is not easy. I study early in the morning, and at the same time I work part-time in the kitchen at a local cafe: I help chop vegetables, wash dishes, and learn new techniques under the watchful eye of the chef. Sometimes the night ends with a textbook on cooking techniques and leveling my resume, because when the chance comes, I will need to show not only passion, but also professionalism. I record my progress in a diary: what techniques I master, what products I manage to present perfectly, what criticism and advice I receive from mentors.
I see myself in a few years in a place where the kitchen is a theater: light, sound and fragrance. I want to work in a restaurant where every employee feels their role and understands that seasonality is not a limitation, but an inspiration. I dream of a culinary career where my perspective on dishes will combine tradition with innovation, where each dish will tell a story about a place, about people and about the time of the year. My dream is a mix of Polish hospitality and international precision.
In the meantime, I study, train myself in practice, learn the language of professional cuisine and collect small victories: successful presentations, perfect souffles, impeccable sauce dressing, which makes the dish sound like music. I know that the path to a Michelin restaurant is long and thorny, but I believe in the power of discipline, perseverance and love of work. And every day, waking up in Poland and looking at my list of goals, I say inside myself: yes, I can. I am Kate, 18 years old, a cook at work and a dreamer at heart. I want my path to the stars to be not only about shining on a plate, but also about honest work, perseverance and respect for the product.
